Don Mercer is a Registered Professional Engineer in the Province of Ontario Canada and is a Fellow of the International Academy of Food Science and Technology. He has 14 years experience in the food processing industry as Senior Research Engineer with Kraft-General Foods Canada, and spent 10 years with Agriculture and Agri-Food Canada as a Special Advisor on Food and as a Commercialization Officer. In 2003, he joined the Department of Food Science at the University of Guelph where he instructs a number of food processing-related courses at the graduate and undergraduate levels. Don has extensive international experience in developing educational training material and conducting food processing workshops (e.g., mango processing workshops).
